Autumn has arrived and so has the opportunity to brew new seasonal styles as we wind down from the sours and sessions of summertime. This Private Collection offers a fresh pairing of strains for cooler days and palates seeking more body and complexity, without compromising approachability.

Our 2782-PC Staro Prague Lager produces exceptional malt-forward German and Bohemian-style lagers that are classic brews this time of year. The versatility of 1581-PC Belgian Stout, like many of our Belgian strains, will complement the ester-forward strong ales and other specialty styles. Rounding out the collection, 9097-PC Old Ale Blend brings English heritage to your glass with a blend of Saccharomyces and a little Brettanomyces to emulate traditional British strong ales and barleywines. With its high alcohol tolerance and rich profile, this blend will create beers ideal for wintertime sipping in the months to come.

These strains are available to order anytime for commercial customers, with the benefit of shorter lead time during this PC quarter. 1581-PC Belgian Stout
Beer Styles: Belgian Pale Ale, Belgian Dubbel, Belgian Tripel, Belgian Dark Strong Ale, Belgian Golden Strong Ale, Belgian Blond Ale, Saison
Profile: A very versatile ale strain from Belgium. Excellent for Belgian stouts and Belgian specialty ales. Ferments to dryness and produces moderate levels of esters without significant phenolic or spicy characteristics.
Apparent ABV Tolerance: 12%
Flocculation: Medium
Apparent Attenuation: 70-85%
Temperature Range: 65-75°F (18-24°C)


2782-PC Staro Prague Lager
Beer Styles: Czech Premium Pale Lager, Munich Helles, Vienna Lager, Festbier, Märzen, Munich Dunkel, Schwarzbier, Helles Bock, Dunkles Bock, Doppelbock, Eisbock
Profile: This yeast will help create medium to full body lagers with moderate fruit and bready malt flavors. The balance is slightly toward malt sweetness and will benefit from additional hop bittering. A fantastic strain for producing classic Bohemian lagers.
Apparent ABV Tolerance: 11%
Flocculation: High
Apparent Attenuation: 70-74%
Temperature Range: 50-58°F (10-14°C)


9097-PC Old Ale Blend
Beer Styles: BritishStrong Ale, Old Ale, English Barleywine
Profile: To bring in a bit of English brewing heritage we developed the “Old Ale” blend. It includes an attenuative ale strain along with a small amount of Brettanomyces. The blend will ferment well in dark worts, producing fruity beers with nice complexity. The Brettanomyces adds a pie cherry-like flavor and sourness during prolonged aging.
Apparent ABV Tolerance: 12-14%
Flocculation: Medium
Apparent Attenuation: 75-80%
Temperature Range: 68-75°F (20-24°C)
