Savor some of our most popular Belgian strains with our Belgische Zomer Private Collection (pronounced Belg-HEE-sheh zow-mer) this summer. Wyeast’s Forbidden Fruit, Trappist Style Blend and Canadian/Belgian Ale strains encompass the entire spectrum of yeast properties, complimented with their distinguished and coveted ester and phenolic profiles. These strains lend themselves to a full range of Belgian brewing styles, from traditional everyday drinking to the more complex requiring greater balance and alcohol tolerance.


3463-PC Forbidden Fruit
Beer Styles: Witbier, White IPA
Profile: A widely-used strain in the production of Witbier and Grand Cru. This yeast will produce spicy phenolics which are balanced nicely by a complex ester profile. The subtle fruit character and dry tart finish will complement wheat malt, orange peel, and spice additions typical of Wits.
Apparent ABV Tolerance: 12%
Flocculation: Low
Apparent Attenuation: 72-76%
Temperature Range: 63-76°F (17-24 °C)


3789-PC Trappist Style Blend
Beer Styles: Belgian Pale Ale, Flanders Red Ale, Oud Bruin, Brett Beer, Trappist Single, Belgian Dubbel, Belgian Tripel, Belgian Dark Strong Ale, Belgian Blond Ale
Profile: A unique blend of Belgian Saccharomyces and Brettanomyces for emulating Trappist-style beer from the Florenville region in Belgium. Phenolics, mild fruitiness and complex spicy notes develop with increased fermentation temperatures. Subdued but classic “Brett” character.
Apparent ABV Tolerance: 12%
Flocculation: Medium
Apparent Attenuation: 75-80%
Temperature Range: 68-85°F (20-30°C)


3864-PC Canadian/Belgian Ale 
Beer Styles: Belgian Dubbel, Belgian Tripel, Belgian Golden Strong Ale, Bière de Garde, Witbier
Profile: This alcohol-tolerant strain produces complex and well-balanced Belgian Abbey-style ales. Banana and fruit esters are complemented nicely with mild levels of phenolics and hints of acidity. Ester levels may be elevated by increasing gravity and fermentation temperatures.
Apparent ABV Tolerance: 12%
Flocculation: Medium
Apparent Attenuation: 75-79%
Temperature Range: 65-80°F (18-27°C)
