Warmer weather brings the tastes of Spring from kettle sours to double IPAs. Brewed to share, whether that may be on the patio, at the beer garden, or in your backyard. Spring 2021’s Private Collection holds something for brewers of all skillsets; novice to expert or modern to traditional techniques.

For those still perfecting their craft, 1217-PC West Coast IPA has thorough attenuation, temperature tolerance, and medium-high flocculation, making this strain particularly easy to work with. Mild ester provides a well-balanced neutral flavor creating a focal point for hops, malts, and other flavors to show through eloquently. Pair your West-Coast-Style craft beer with strong and bold flavors of Biryani to heighten the spice and bring out the sharp hops.

For the Brewers looking for something subtle and light in color, 2575-PC Kӧlsch II adds rich flavor drawing attention to its smooth malty finish. Feel like you’re in the heart of Germany with bratwursts, nutty cheeses, and German-Style Kӧlsch. Experiment working with 2575-PC fermentation procedures to produce fruity ales or clean lagers depending on your brewing preference.

5223-PC Lactobacillus brevis creates remarkable Fruit Lambics and Berliner Weisses, making this strain quintessential for Spring. Working with 5223-PC can be challenging and timely; therefore, brewers need to work patiently for proper aging. Worth the wait when you pair dry Fruit Lambic with prosciutto and pear or ceviche and a pint of Gueuze.

1217-PC: West Coast IPA
Saccharomyces cerevisiae
Profile: This strain is ideally suited to the production of West Coast-style American craft beers. Thorough attenuation, temperature tolerance, and good flocculation make this an easy strain to work with. Flavor is balanced neutral with mild ester formation at warmer temperatures, allowing hops, character malts, and flavorings to show through.
Beer styles: American Pale & Brown Ales, American IPA, Red IPA, Double IPA, Scottish Light, Scottish Heavy, Scottish Export, Wee Heavy
Apparent ABV Tolerance: 10%
Flocculation: Medium-High
Apparent attenuation: 73-80%
Temperature range: 62-74 °F (17-23 °C)


2575-PC: Kӧlsch II
Saccharomyces cerevisiae
Profile: This authentic Kӧlsch strain from one of Germany’s leading brewing schools has a rich flavor profile which accentuates a soft malt finish. It has low or no detectable diacetyl production and will also ferment well at colder temperatures for fast lager type beers.
Beer styles: Kölsch, Altbier, International Amber Lager, Festbier
Apparent ABV Tolerance: 10%
Flocculation: Low
Apparent attenuation: 73-77%
Temperature range: 55-70 °F (13-21 °C)


5223-PC: Lactobacillus brevis
Lactobacillus brevis
Profile: Unlike most lactic acid bacteria used in brewing, this species will tolerate higher levels of IBUs in wort. This strain is excellent for remixing the profile in a Lambic-style or Flanders Red Ale, or for kettle souring wort for a balanced Berliner Weisse.
Beer styles: Lambic, Gueuze, Fruit Lambic, Flanders Red Ale, Berliner Weisse, Oud Bruin, Mixed-Fermentation Sour Beer, Wild Specialty Ale
Apparent ABV Tolerance: 9%
Temperature range: 60-95 °F (15-35 °C)
